Since I could remember I have always loved baking, it was the one constant in my ever changing life. I was an avid baker up until I fell extremely ill and found out that I had a gluten intolerance, only to learn later that I have a thyroid autoimmune disease known as Hashimotos. I was devastated because baking would aggravate my condition which meant that I was no longer able to bake using flour, which as we all know is a gluten base baking ingredient.
With encouragement from my family and after multiple attempts at different gluten-free recipes and failure after failure I can proudly say that I have accomplished baking delicious treats that quite honestly break the mold of the "gluten tastes awful". I have had multiple people say that they wouldn't be able to tell that my products are gluten free.
